What's For Dinner? - Lomo Saltado

Living with my Girlfriend's two kids that are 1/2 Spanish and 1/2 Austrian, I thought I'd combine their Spanish side with my Filipino/Asian side and make a Peruvian favorite from South American that combines these two cuisines in a dish called Lomo Saltado.

Aji Sauce
1/2 Head Iceberg Lettuce, Roughly Chopped
1 Jalapeno, Whole, de stemmed, roughly chopped
1/2 Cup Mayonnaise
1/4 Cup Lemon Juice
1/2 Head of Cilantro
Salt - To Taste

Beef Broth
3 TBSP Red Wine Vinegar
2 TBSP Soy Sauce
2/3 Cup Beef Stock (Or Chicken Stock)
2 TSP Cumin
1/2 Cup Fresh Cilantro, Chopped

Beef Mixture
1 1/2 Lb Sirloin Steak
Salt & Pepper TT
1 TBSP Baking Soda
1 Small Red Onion, Julienned
3 Tomatoes, deseeded, Julienned
2 Cups French Fries, crispy
1 Cup White Rice, Jasmine, Rinsed
2 Cups Water

For The Sauce
1.  Combine Lettuce, Jalapeno, Mayo, Lemon Juice, Cilantro, salt and blend till consistent & smooth.

For The Beef Mixture
2.  Tenderize meat and add baking soda to meat for 15 minutes or allow the mixture to marinate over night.
3.  Combine Red Wine Vinegar, Soy Sauce, Beef Stock, Cumin, Cilantro for beef broth
4.  Deep Fry French Fries till crispy, drain, and salt
5.  Combine water and rice and cook on low heat or until water has completely steamed into rice.
6.  In a hot pan line with oil and brown all sides of the meat.  Remove from pan.
7.  In the same pan, over high heat, saute sliced onions and tomatoes until soft.  Allow moisture vegetables to release and pull up browned bits left in pan from sauted meat.
8.  Return meat and add beef broth.  Simmer until meat is fork tender.

To Plate
9.  Lay Fries on the bottom and add Beef, tomato and onion mixture over and ladle Aji Sauce over everything.  Serve with steamed rice on the side. Enjoy!!!
