S'more Ice Cream Pie

S'more ice-cream pie

S’more Ice-Cream Pie
Whole Milk                                                  2 1/2 Cups
Heavy Cream                                              1 Cup
Sugar                                                          3/4 Cup
Salt                                                             3 - Finger Dash
Cocoa Powder                                            1/4 cup Cocoa Powder
Semisweet Chocolate Chips                         4 ounces
Egg Yolks                                                    4 ea.
Vanilla Extract                                             1 1/2 tsps.
Jet-Puffed Marshmallow Creme (7-oz)        1 ea. 
Keebler® Ready Crust® Graham Pie Crust     1 ea.
To Make Ice-Cream
1. In a heavy-sauce pan, on medium to low heat, combine milk, cream, sugar, salt, and bring to a simmer.  Stir until sugar has been combined completely.  Add in the Cocoa Powder and Chocolate chips until everything has melted.  Scrape bottom edges to prevent scorching.  Remove from heat.
2.  In a separate bowl, beat the egg yolks lightly.  In a thin, steady stream, slowly whisk the chocolate cream mixture into the egg yolks.  (It’s gradually combined to avoid scrambling the eggs causing a grainy texture instead of a desired creamy mouth-feel.)
3.  Combine completely with eggs, add vanilla, and strain into a stainless steel bowl that’s underlined with another bowl filled with ice water (ice-bath) to rapidly chill the cream mixture.  Once brought to room temperature place in the refrigerator for up to 4 hours or overnight.
4.  Following the ice-cream makers instructions, churn ice-cream base.  While ice-cream is being made, take half the marshmallow fluff and gently spread over the graham cracker pie crust to avoid breaking. Once ice-cream has been to desired texture pour half into the marshmallow fluffed line pie crust.  Take the remaining marshmallow and spread over the top layer.  Cover the second layer of marshmallow with the remainer of ice-cream.  Cover with wax paper to avoid any freezer-burn and wrap and place back in the freezer to rest.
5.  Go to work and give to your family while you’re gone cause you’ll be thankful that you made your family smile today without you even being there, and you’ll be thankful to come home to S’more ice-cream.
