Mom's Salad

My mother had surgery recently and my sisters and I have been doing our part in helping out with the house duties so she can rest.  Of course, I chose to do what I do best, I made dinner.  There were a lot of random veggies in the fridge and thought it would be a healthier, refreshing welcome back from the hospital.     



Salad for Mom
Yield: 2 people

Ingredients                                                   Amounts
Spring mix, bag, small, from albertsons          1 ea. 
Red Onion, small, halved, small dice              1 ea. 
Tomato, Roma, diced, no seeds                       1 ea. 
Parsley, sprigs                                                 6 ea. 
Jicama, Julienned, matchsticks slices          1/2 cup
Chicken Tenders, grilled, diced                   1/4 cup
Lemon, juiced, no seeds                                 1 ea. 
Olive Oil                                                      2 Tbsp. 

Method
1.  Heat grill or cast-iron skillet till smoking hot.  Season Chicken tender with salt and pepper.  To create beautiful grill marks lay chicken on an angle.  If it were the hand on a clock it would be pointing at 10:00.   Grill for a minute or until grill marks are a nice golden brown.  Then turn chicken towards 2:00 grill for a few more minutes and then flip.  Turn once more and allow chicken to cook all the way through.  After it has finished pull chicken out and allow to cool.  With a sharp knife dice. 
2.  Combine all ingredients in a large bowl and dress with lemon juice and olive oil.
